Quinoa (Keen' wa) is a small, light tan seed, round but flattened on the ends. It has been called "the seed of the gods", a term that is befitting this wondrous little seed.
Quinoa (Chenopodium quinoa Wild) is an annual herb from the Andes Mountains of South America, where it has been cultivated for 3000 years. It was a staple of the Inca Empire. They considered it a "gift from the gods", in that it helped to sustain and nourish their peoples through the generations.
Quinoa is a high protein, gluten free grain-like seed, and a good source of protein, fiber, complex carbohydrates and vitamins. Quinoa provides people, especially those with gluten intolerance, a nutritional, economical, easy to prepare, flavorful food source.
It is not really a grain for it does not belong to the grass family. It is the seed of a broad leaf plant, and a close relative of lamb's quarters. The quinoa plant grows 3 to 7 feet high and produces a small, flat, circular-shaped seed.
Varieties have been adapted which grow well on the Canadian prairies, enabling local farmers to grow a great alternative food source. The quinoa we offer is grown organically, without need of pesticides.
Quinoa, as a plant that thrives at high altitude conditions, adapts very well to the growing conditions of the prairies of Saskatchewan with hot days, cool nights, abundance of sunshine, clean air and gentle rains.
The golden Quinoa varieties grown on the prairies are said to be more flavorful than the white seeded South American types, while being nutritionally similar.
The ancient Incas also called quinoa the "mother grain". The United Nations Food and Agriculture Organization observes that quinoa is closer to the ideal protein balance than any other common grain, being at least equal to milk in protein quality.
Quinoa has a nutritionally attractive amino acid balance, being exceptionally high in lysine. Lysine is considered to be deficient in most cereal grains, making their protein profile incomplete.
Quinoa's nutritional profile has higher levels of calcium, phosphorus, iron, fiber and B-Vitamins than barley, oats, rice, corn, or wheat. With it's B vitamins and easily digested proteins and carbohydrates, quinoa is known as an energy food. The United Nations Food and Agriculture Organization (FAO) states the quality of Quinoa is "equal to... the protein of whole dried milk".

Simple Preparation Of Quinoa
Quinoa is very simple to prepare for eating.
The instructions on the bag state to add 1 cup of quinoa to 1 cup of boiling water, then bring back to a boil and simmer for 8 to 10 minutes, until the water is absorbed. You can add a little more water for a fluffier result.
An even easier method is to add the quinoa to the same amount (or slightly more) of boiling water, then turn off the heat, cover it, and let it sit till the water is absorbed.
You can add the quinoa to salads, soups, vegetables, casseroles, eggs, potatoes, etc., or just eat it with some natural mineral salt or spices on it. Try eating quinoa for breakfast with our organic milled flax and some cinnamon added.
For raw food consumers, just soak the quinoa in water for several hours, pour off the excess water, and chew the seeds thoroughly.
